PORK CHOP CASSEROLE 
6 thin center cut pork chops
1 tsp. salt
1/2 tsp. pepper
1 c. all-purpose flour
3 tbsp. oil
1/2 c. uncooked rice
1 lg. onion, thinly sliced
2 carrots, peeled & thinly sliced
1 can (10 3/4 oz.) beef gravy or cream of chicken soup

1. Preheat oven to 350 degrees.

2. Sprinkle chops with salt and pepper. Place flour in a paper bag. Add chops and shake until well coated. Heat oil in a large heavy skillet. Add chops and brown on both sides. Place in baking dish. Add rice to dripping in skillet. Cook for 10 minutes or until browned.

Spoon over pork chops. Cover with onions and carrot slices. Pour gravy or chicken soup over all. Cover, bake 1 1/2 hours or until meat and rice are tender. Makes 4 to 6 servings.
