STUFFED GREEN PEPPERS | |
5 or 6 green bell peppers 2 cans whole tomatoes 1 lb. hamburger 1 c. Minute Rice 1 c. boiling water 1/4 c. chopped onion Put Minute Rice in boiling water and cover. Set aside while you prepare peppers. Cut top of pepper off, about 1/2 inch down from top - set top aside. Clean out pepper being careful not to break pepper. Mix cooked rice, raw hamburger and chopped onion together. Fill peppers with mixture and put tops on peppers. Hold tops in place by sticking 3 toothpicks in lid and down through bottom of pepper. Pour 2 cans of tomatoes (with juice) into big pan on stove. Cut tomatoes up a little. Place stuffed peppers in pan of tomatoes being careful not to knock lids off peppers. Cover and bring to a boil; turn down and cook for an hour or so, until peppers are cooked. Serve with mashed potatoes. |
