FRUIT RICE WHIRL | |
1 (No. 10) can canned fruit cocktail 3 c. fruit cocktail syrup 6 oz. lime flavored gelatin 6 oz. lemon flavored gelatin 1/2 c. lemon juice 1/2 tsp. mint extract (optional) 2 1/2 qt. hot cooked rice 1 gallon, 2 c. whipped topping mix, whipped Drain fruit cocktail, saving syrup. Bring 3 cups syrup to boil and use to dissolve gelatin. Add lemon juice and mint extract. Add gelatin mixture to hot rice. Fold in drained fruit cocktail. Prepare topping mix according to package directions. (Should be 1 gallon and 2 cups.) Fold into gelatin-rice mixture. Turn into 1 (12 x 20 x 2 1/2 inch) pan. Chill until set. Spoon into serving dishes or cut 6x8. About 48 (1/2 cup) servings. |
