CHICKEN AND DUMPLINGS 
2 1/2 lb. cooked and deboned chicken
1 egg
2 tbsp. milk
1/2 tsp. salt
3 tsp. baking powder (use Oetker for best results)
Flour

Cook and debone chicken. Put this meat with the broth into a large kettle with a tight fitting lid.

Beat the above ingredients with enough flour to make a good stiff dough. Drop it by spoonfuls into the boiling broth. Cook the dumplings, covered for 5-8 minutes. It is important that the lid not be removed during this time. Remove the kettle from the stove, take the lid off and serve the chicken and dumplings at once. The dumplings should be light and fluffy.
