CHICKEN CACCIATORE 
4 lbs. chicken, cut up
1/4 c. salad oil
4 green peppers, sliced
4 onions, sliced
3 garlic cloves
1 (35 oz.) can crushed tomatoes
1 (15 oz.) can tomato sauce
1/2 c. dry red wine
1 tbsp. basil
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. pepper
1 lb. fresh mushrooms

Cook onions, garlic and peppers until onions are translucent. Add tomatoes, tomato sauce, wine, seasonings and chicken. Simmer partially covered 25 minutes. Add mushrooms and simmer 10 minutes more. Serve with cooked rice.
