CHICKEN CACCIATORE 
1 fryer chicken, skin removed
3 stalks of celery, sliced
1 onion, chopped
1 pkg. fresh mushrooms, sliced
1 can Hunts tomato sauce with bits
1 can of water
1/2 c. cooking sherry
Pinch of Italian seasoning
Salt & pepper

Fry chicken, skin removed in a little oil until brown. Set aside. Take your chopped onion and sliced celery and mushrooms and saute in the same oil you fried your chicken in. Place chicken, onion, celery and mushrooms in a roasting pan. Add Hunts tomato sauce with bits, can of water and 1/2 cup of cooking sherry. Add a pinch of Rosemary leaves and sprinkle with Italian seasoning. Add salt and pepper. Cook 1 1/2 hours at 350 degrees. Serve over bed of rice.
