GOURMET POTATOES 
6-8 med. potatoes, boiled, cooled & diced
2 c. shredded cheddar
1/4 c. butter
1 1/2 c. sour cream
1/3 c. chopped green onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Combine shredded cheddar, 1/4 cup butter over low heat. Stir until melted. Remove from heat and blend in sour cream, onion, salt and pepper. Fold in potatoes and turn into greased 2 quart casserole. Dot with 2 tablespoons of butter. Sprinkle with paprika. Bake in 350 degree oven for 30 minutes.
