GERMAN POTATO SALAD 
15 lb. potatoes
Salt
1 lb. bacon
1 c. Bermuda onion, chopped
1 1/2 c. vinegar
4 c. water
1/2 c. sugar
1/4 c. flour

Slice small potatoes that have been cooked in jackets. Put in layers with salt. Cut up bacon and fry. When almost crisp, and chopped onions, and saute until done. Add water, vinegar, and sugar. Make thickening with flour. Pour over potatoes and stir gently, often. Reheat in low oven about 1 hour before serving.
