GRATIN OF ZUCCHINI AND ONION 
1 onion
2 lb. zucchini
3 oz. Parmesan cheese (about 1 c. grated)
1/4 c. olive oil
1/4 c. dry bread crumbs
Salt and pepper are optional

Heat oven to 400 degrees. Butter 1 1/2 quart baking dish. Slice onion and zucchini. Grate cheese. Heat 2 tablespoons oil in large fry pan over medium-low heat. Add onions and cook until soft, about 5 minutes. Raise heat to medium-high, add 1/2 zucchini. Cook, stirring occasionally until soft and starts to brown, about 5 minutes. Transfer to prepared baking dish. Cook remaining zucchini the same way, using 1 tablespoon oil. Add to baking dish. Arrange zucchini in concentric circles (if you want to be fancy). Sprinkle with bread crumbs and cheese. Drizzle with 1 tablespoon oil. Bake until golden, 15-20 minutes. 8 servings.
