PUMPKIN OATMEAL COOKIES 
1 1/2 c. sugar
1/2 lb. butter, softened
2 egg whites
1 1/2 c. flour
1 c. oats
1/4 tsp. baking soda
1 c. solid pack pumpkin
1/2 tsp. pumpkin pie spice
1/4 c. sesame seeds

Beat 1 cup sugar and butter until fluffy. Mix in egg. Stir in flour, oats and soda. Press into 16 x 12 inch rectangle on waxed paper. Spread 1/2 cup sugar, pumpkin and spice over it. Roll and sprinkle with seed. Wrap in waxed paper. Freeze overnight or until firm. Cut into 1/4 inch slices and bake on a greased sheet 9 to 11 minutes at 400 degrees.
