VEGETABLE STEW | |
1 tbsp. onion 1 sm. can tomatoes 1 green pepper 2 sm. summer (yellow) squash 2 eggs In medium saucepan, put in oil of your choice to cover bottom of pan. Cut up onion and saute in oil. Pour cut up tomatoes in pan. Salt and pepper to taste. Sprinkle a bit of oregano and simmer 15 minutes. Peel and cube squash and pepper. Salt and pepper to taste. Add to tomatoes. Cook until tender. Drop in eggs and stir. Wait until eggs are cooked and serve. |
