PEPPER STEAK 
1 lb. flank steak, sirloin, or round steak, cut across the grain into 2x4 inch pieces
2 tbsp. soy sauce
2 tsp. salt
1/4 tsp. pepper
1 tbsp. sherry
2 tbsp. cornstarch
1 tbsp. oil
1 green pepper, diced
1 onion, diced
1 carrot, sliced diagonally
2 slices fresh ginger root (1/4 inch slices)

MEAT SAUCE:

1/4 c. meat broth
1 tsp. sugar
1 tsp. salt
1 tbsp. cornstarch
1 tbsp. oyster sauce (instead of salt)

Mix thoroughly beef, soy sauce, sugar, salt, black pepper and sherry. Add cornstarch, mix. Add oil, mix. Heat 1/4 cup oil in skillet, brown slices of ginger, discard ginger. Add beef to oil and stir fry for 2 minutes. Remove beef, wipe out pan.

Heat 1 tablespoon oil, stir fry vegetables--green pepper, onion, and carrot slices. Add 1 teaspoon salt. Pour meat into pan with vegetables. Add meat sauce. Cook for 2 minutes. Serve while hot.
