SAUSAGE AND SQUASH CASSEROLE | |
3 or 4 big squash (any kind) 1 lb. sausage 1 med. onion, chopped 1/2 c. celery, chopped 1 green pepper 1/3 c. Parmesan cheese 3 tbsp. sour cream Cut squash into 1-inch cubes and cook until done. Drain water and butter. In skillet, brown 1 pound sausage and chopped onion. Drain grease; put sausage and onion in a casserole dish. Add celery, green pepper, Parmesan cheese, sour cream and squash. Sprinkle Parmesan cheese on top. Bake at 350 degrees for 30 minutes. NOTE: If you don't have sour cream, you can use cream or milk with a little vinegar. |
