CAROLYN'S CAMP ROAST | |
1 1/2 c. water 3 - 4 lb. roast 6 med. potatoes, quartered 3 carrots, sliced 2 sm. Vidalia onions Salt and pepper Large pot with tight lid (Dutch oven best) Shovel Wood pieces or charcoal for fire Rocks to line fire hole with Dig a hole 2 feet square and 18 inches deep. Line bottom of hole with rock (large flat rocks are best). Build fire in hole. While fire is burning down, place roast in pot, surround with potatoes, carrots, and onions. Add 1 1/2 cups water. Season as you desire. Close lid. When coals are white hot, place pot in the hole. Immediately! Cover pot and hole with dirt that you removed. Do not touch it for 4-5 hours. After which you may carefully dig it up and eat. |
