GRANDMA JANIE'S LEMON PIE 
Stove Top Ingredients:

1 cup sugar
5 level tablespoons flour
1 1/4 cup water
1/3 cup lemon juice
1 tsp. lemon rind
1/4 tsp. salt
2 egg yolks
2 tbsp. butter

Other Pie Ingredients:

2 egg whites, whipped
4 tablespoons confectioners sugar

Meringue:

2 egg whites
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
4 tablespoons sugar

Combine and cook ingredients in a saucepan over medium heat until thick; remove from heat; while hot, add the 2 leftover egg whites, whipped, plus 4 tablespoons confectioners sugar. Stir just enough to mix. When adding egg whites to hot mixture, fold in slowly and carefully.

Pour mixture into a cooked and cooled pie shell.

Spread with Meringue:

Beat egg whites, vanilla, and cream of tartar till soft peaks form. Gradually add sugar until stiff glossy peaks form. Spread over hot filling and seal at pie crust edges.

Bake at 350°F for 12 to 15 minutes in center of oven. Cool for several hours.

To serve, dip cutting knife in water.

This pie is a bit tart. Just right!!!

My Grandmother's recipe: Edith Britton McDaniel of Macon, Ill. (1888 to 1961)

It's the only recipe I've ever seen containing only 2 egg yolks, and absolutely no thickener such as corn starch in the pie. My grandmother was known for her cooking. I do believe you could enter this one in the county fair and win. You have my blessing. It's an old family recipe. You don't have to tell anybody who's family.
