GREEN OR RED PEPPER JELLY 
4-5 lg. green or red peppers
1 tsp. cayenne pepper
1 1/2 c. vinegar
1 box Sure Jell
6 1/2 c. sugar

Slice peppers thin and puree with vinegar. Put peppers, pectin and pepper in kettle. Boil 1 minute. Skim foam; add sugar and stir well. Boil 2 minutes. Skim foam. Add red or green food color. Seal in jars. Makes about 6 (8 ounce) jars. Great on top of crackers and cream cheese.
