CHICKEN DIJON 
6 boneless chicken breasts
Dijon mustard
1 c. cracker crumbs
2 eggs
Melted butter

Pound chicken breasts; spread 1 side with Dijon mustard. Roll; secure with toothpick.

Beat the eggs. Coat the chicken, then cover with crumbs. Melt the butter. Place chicken in 8x8 casserole. Pour butter over top. Turn chicken to coat all of it. Bake at 350 degrees for 45 minutes. Serves 4-6.
