CHICKEN DIJON 
6 broiler-fryer chicken thighs
1/4 c. Dijon mustard
1 egg, beaten
1 clove garlic, minced
1 c. Italian style bread crumbs
1/2 tsp. salt
1/4 tsp. fresh ground pepper

In a shallow dish mix mustard, egg and garlic. In another shallow dish mix crumbs, salt, and pepper. coat chicken first in egg, then in crumbs. Place chicken, skin side up (or skinned) in a large shallow baking pan. Bake, uncovered, in 375 degree oven for about 1 hour. Serves 3-4.
