CHOCOLATE CHIP CHEESECAKE 
PASTRY:

1/2 c. butter
1 egg yolk
1 c. flour
2 tbsp. sugar

FILLING:

16 oz. cream cheese
4 egg yolks
1/2 c. sugar
1 tbsp. flour
1/4 c. heavy cream
1/4 c. sour cream
1 tsp. vanilla
1/4 tsp. salt
1/2 c. mini chocolate chips
4 egg whites

Combine butter, egg yolk, flour and sugar to make pastry. Divide in half. Refrigerate one half. With remaining half, press onto bottom of springform pan. Bake at 400 degree oven for 8 minutes or until lightly brown. Cool. Fit rim onto pan and press refrigerated pastry inside rim and up the sides. Refrigerate.

Cream together the cream cheese, 4 egg yolks, sugar and flour. Then add the heavy cream, sour cream, vanilla and salt. Fold in chocolate chips. Next fold in egg whites that have been already beaten and hold a nice peak. Pour into prepared pan. Bake at 350 degrees for 45 minutes or longer until firm. Cool. Decorate with chocolate leaves and sweetened whipping cream.
