CURRIED APRICOT - RICE SALAD 
1/3 c. mayonnaise
1/3 c. plain yogurt
1 clove garlic, minced
2 tsp. lemon juice
1 1/2 tsp. curry
1/2 tsp. ground cumin
1/2-1 tsp. finely chopped jalapeno (optional)
1 tsp. salt
1 1/2 c. chopped dried apricots
1/2 c. diced apple
1/2 c. chopped celery
1/3 c. chopped peanuts
1/3 c. flaked coconut
1/3 c. sliced green onion
2 tbsp. finely chopped cilantro
4 c. hot cooked long grain rice

Combine mayonnaise, yogurt, garlic, lemon juice, curry, cumin, chili and salt; set aside. Toss together other ingredients; stir into hot rice. Add mayonnaise mixture and toss. Chill before serving.
