MEXICAN CORNBREAD 
1 c. cornmeal
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk (more if needed)
1/2 tsp. baking soda
3 eggs
1 onion, chopped
1 can cream style corn
3 sm. hot peppers, cut up

Mix together cornmeal, baking powder, salt, soda and milk. Break in eggs. Add onions, corn and hot peppers. Pour half the cornbread batter in a hot greased skillet. Cover with a thick layer of grated cheese or cut up meat. Pour rest of cornbread batter over cheese or meat. Bake at 350 degrees for 40 to 50 minutes or until done.
