SALMON LOAF | |
2 (16 oz.) cans salmon 2 eggs 1 1/2 c. liquid (salmon and milk) 3 c. coarse cracker crumbs 2 tbsp. lemon juice 2 tsp. chopped onion 1/4 tsp. each salt and pepper Grease a loaf pan (9x5x3). Flake salmon. Blend in eggs. Stir in remaining ingredients. Spoon lightly into pan. Bake 45 minutes at 350 degrees. Garnish with lemon wedges. Serves 4-5. |
