ZUCCHINI CON PATATE | |
1 med. onion, sliced 2 tbsp. olive oil or cooking oil 2 c. sliced zucchini 2 med. potatoes, peeled & diced 1 med. tomato, peeled & chopped 1 tsp. dried oregano, crushed 1/2 clove garlic, minced 1/2 tsp. salt 1/8 tsp. pepper Grated Parmesan cheese In skillet, cook onion in oil until tender; but not brown. Stir in vegetables, oregano, garlic, salt and pepper. Cook, covered until potatoes are tender, about 15 minutes. Serve with grated Parmesan cheese. Yield: 4 servings. NOTE: This makes a nice fall vegetable dish. |
