NANCY'S APPLE CHEESECAKE 
CRUST:

1/2 c. butter
1/3 c. sugar

FILLING:

8 oz. cream cheese
1/4 c. sugar
1 egg
1 tsp. vanilla

TOPPING:

2-3 apples
1/4 c. sugar
1 tsp. cinnamon
1/4 c. sliced almonds

CRUST: Cream butter and sugar; add flour and mix well. Press into bottom and sides (1 1/4" up) of greased 9" greased spring form pan.

FILLING: Mix softened cream cheese and sugar, add egg and vanilla. Blend well. Spoon into crust.

TOPPING: Core, peel and thinly slice apples. Combine sugar and cinnamon in a bowl, add apple slices, turn to coat all slices. Arrange coated apples in pattern on cheese mixture. Sprinkle with almonds. Bake at 450 degrees for 10 minutes, reduce to 400 degrees and continue baking for 25 minutes. Remove and cool for 3 to 4 hours before refrigerating.
