ELOISE'S CARROTS 
2 1/2 lb. whole carrots
1/2 c. mayonnaise
1 tbsp. minced onion
1 tbsp. prepared horseradish
Salt and pepper to taste
1/4 c. finely crushed Saltine crackers
2 tbsp. butter

Cook carrots. Cut lengthwise. Save 1/4 cup cooking liquid. Combine cooking liquid with mayonnaise, onion, horseradish, salt, and pepper. Pour sauce over carrots placed in greased 9 inch square baking dish. Sprinkle with crumbs. Dot with butter. Bake at 375 degrees for 20 minutes.
