ORANGE RICE 
3 tbsp. butter
2/3 c. diced celery
2 tbsp. chopped onion
1 c. water
1 1/2 c. orange juice
2 tbsp. slivered orange rind
1 1/4 tsp. salt
1/8 tsp. thyme
1 c. uncooked rice (not Minute)

Melt butter in skillet. Add celery and onion. Saute until tender but not brown. Add water, orange juice, rind, salt and thyme. Bring to a boil and slowly add rice. Cover, reduce heat and simmer 25 minutes. Can be baked in a moderate oven until rice is fluffy. Bake at 325 degrees for 45 minutes.
