RICE SALAD WITH ORANGE SECTIONS 
1 c. cooked rice
1/2 c. orange juice
3 tbsp. Italian dressing
1/2 tsp. grated orange peel
2 c. fresh spinach, cut up into bite-size pieces
2 oranges, peeled and sectioned
1/2 c. sliced celery
1/4 c. toasted, slivered almonds
2 tsp. honey

Cook rice according to package directions. Chill covered in large bowl. Combine orange juice, honey, dressing, and orange peel. Stir into chilled rice. Cover and chill. Stir in remaining ingredients when ready to serve. Serves 6-8 people.
