CARROT PUDDING 
1 stick parve butter
1/2 c. brown sugar
2 whole eggs
3/4 c. matzo meal
1 tsp. baking powder
6 mashed soft cooked carrots
1 tsp. vanilla

Cream the butter with the brown sugar. Add the eggs, matzo meal and baking powder. Stir in the carrots and vanilla and then beat well. Bake in a greased mold pan for 1 hour in a 350 degree oven. (I use butter to grease the pan -- it does not burn.)
