SHRIMP OR CRAB QUICHE 
9" pie shell, baked
1/2 c. mayonnaise
1/2 c. milk
2 tbsp. flour
3 eggs, beaten
Dash of nutmeg

Mix above ingredients, then add: 1/2 lb. Swiss cheese, shredded 1/3 c. onion, grated or chopped

Mix and pour into pie shell. Sprinkle top with paprika and bake at 350 degrees for 30 to 40 minutes, until firm. Optional: A cream sauce of 1 can or cream of shrimp and 1 can of cream of celery soup mixed and heated as to directions on can. May be poured over each serving. Sauce can be thickened with cornstarch if too thin.
