DISNEYLAND'S OATMEAL - RAISIN COOKIES | |
3 1/4 c. flour 1 tbsp. baking powder 1 1/2 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 2 c. plus 2 tbsp. shortening 1 3/4 c. packed brown sugar 1 1/2 c. granulated sugar 3 eggs 1 tsp. vanilla extract 4 c. Quaker oats 2 1/2 c. raisins Blend flour, baking powder, cinnamon, salt and soda. Set aside. In mixing bowl, blend shortening, brown sugar, granulated sugar, eggs and vanilla until fluffy. Mix in dry ingredients until well blended, about 2 minutes. Blend in oats and raisins. On baking sheet place balls made out of 2 1/2 tablespoons dough. Press dough down until about 1/4-inch thick and about 3 inches across. Bake at 350 degrees 9-12 minutes. Cool on baking sheet. Makes about 2 dozen. NOTE: I used part Crisco, part butter, Weight Watchers Spread, whatever. Also I used golden raisins. If raisins are hard, cover with boiling water for a minute or two and then drain. They're really good! |
