1/2 c. butter 2 c. sugar 6 eggs 3 tsp. baking powder 1 1/2 c. diced mixed fruit & whole pine nuts 1 1/2 tsp. Anise extract 5 c. flour 1/2 tsp. salt Cream butter and sugar in large bowl. Blend in Anise extract and eggs. Mix together flour, baking powder and salt. Gradually mix into batter to make a stiff dough. Divide dough into 4 parts, make a rectangle 12 inches long, 8 inches wide; sprinkle surface of dough evenly with 1/3 fruit and nuts. Start with wide side of rectangle and roll dough to make a long compact loaf. Place rolls on lightly greased baking sheets (2 on each). Bake at 375 degrees for 25-30 minutes or until brown. Remove from oven and let cool on pans for 5 minutes. Cut into diagonal slices 1/2 inch thick. Lay on sides and bake for an additional 16-18 minutes. |
