OVEN FRIED CHICKEN | |
1 cut-up fryer 4 tbsp. corn oil 1/2 c. cornmeal 4 tbsp. butter 1 c. flour 1 tsp. seasoned salt Heat oven to 400 degrees. Line 10 x 14 inch pan with aluminum foil. Chunk the butter in the pan and melt in the oven. When melted, add the corn oil. Mix cornmeal, flour and seasoned salt. Roll each piece of chicken in mixture and place skin side down in pan, coating with the oil and butter first. Bake for 45 minutes, turn pieces over and bake an additional 25 minutes. Drain and serve. |
