PEPPY STUFFED PEPPERS 
4 green peppers
1 lb. ground beef
2 c. cooked rice
1/4 c. onion, chopped
1 1/2 tsp. salt
1/8 tsp. pepper
2 (8 oz.) cans tomato sauce

Cut peppers in half lengthwise. Remove seeds and wash. Combine beef, cooked rice, onion, salt, pepper and 1/2 can tomato sauce. Pile mixture into peppers in large baking dish. Pour tomato sauce that's remaining over each pepper. Cover tightly and bake in 350 degree oven for 1 1/2 hours or until peppers are tender, basting occasionally so sauce cooks into the peppers.
