COCONUT ORANGE BREAD 
3 c. flour
4 tsp. baking powder
1 tsp. salt
1 c. sugar
2 tbsp. orange juice
1 egg, lightly beaten
2 tbsp orange rind, grated
1/2 c. fresh grated coconut
1/3 c. melted shortening

Sift the flour, baking powder, salt and sugar. Combine the orange juice, egg, orange rind, grated coconut and melted shortening. Cool the shortening before using.

Stir the liquids into the flour mixture and stir just enough to moisten. Do not overmix. Pour into a greased loaf pan and bake at 350°F for one hour or until done. Remove from pan. Cool.

Bread will slice better the second day. Wrap in wax paper to store. Serve with softened cream cheese.
