Dissolve 2 yeast cakes in 1 1/2 cups lukewarm water. Set aside. Cream together 1 cup sugar, 3/4 cup shortening or butter. Add 1/2 cup cold mashed potatoes according to preparation directions. 3 eggs, well beaten. Scald and cool 1 quart of milk. Add 1 tablespoon salt, 2 tablespoons lemon extract to milk. Blend thoroughly. Combine all ingredients; mix well.
Mix in 6-8 cups sifted flour. Knead well, adding just enough flour to make soft dough. Let rise until very light, 30 minutes. Brown on both sides. Heat deep fat to 375 degrees. Makes 4 dozen.
