EASY MINCEMEAT MUFFINS 
1 1/2 c. flour
2 tsp. baking powder
1/4 c. brown sugar
1/2 tsp. salt

Blend and add:

2 eggs
1/2 c. apple or orange juice
1 c. mincemeat

Combine flour, baking powder, brown sugar and salt. Beat eggs; add to mixture. Stir in apple or orange juice.

Spoon batter into a greased muffin pan, and bake at 400°F for 15 to 20 minutes.

Makes about 1 dozen.
