EASY CHEESY MUFFINS 
1 c. self-rising corn meal
1 c. self-rising flour
5 tbsp. sugar
3/4 c. grated sharp cheese
1 c. milk
1 egg, beaten
3 tbsp. melted shortening

Combine meal, flour and sugar in bowl. Add grated cheese and blend. Add milk, egg and shortening and stir until thoroughly blended. Fill hot, greased muffin pans about 2/3 full.

Bake at 425°F for about 20 minutes.

Makes 10 to 12 muffins.
