EASY BEEF STROGANOFF 
2 lb. filet of beef
6 tbsp. butter OR oil
1 c. chopped onion
1 clove garlic, minced
1/2 lb. fresh mushrooms, sliced
3 tbsp. flour
2 tsp. meat extract OR 2 bouillon cubes
1 tbsp. catsup
1/2 tsp. salt
1/2 tsp. pepper
1 c. beef broth
1/4 c. dry white wine
1/4 - 1/2 tsp. dried dill weed
1 1/2 c. sour cream

Slice beef in half inch strips. Melt butter and brown meat. Remove from skillet. Saute onion, garlic and mushrooms 5 minutes. Add flour, meat extract, catsup, salt and pepper. Stir well until smooth.

Add broth. Simmer 5 minutes over low heat. Add wine, dill and sour cream, stirring well. Add beef and simmer until hot. Serve over rice or noodles.
