1 (10 oz.) pkg. frozen spinach, chopped
2 tbsp. butter

Melt butter in an 8"x8" pan. Spread spinach on butter. Sprinkle 1 tablespoon flour on spinach. 1/4 c. milk or half and half Salt & white pepper to taste 4 oz. grated Jack or Swiss cheese

Beat eggs well with milk, seasonings and cheese. Bake at 275 degrees for about 50 minutes until set. Do not brown.
