ITALIAN SPINACH BAKE 
6 eggs
1 1/2 c. ricotta cheese
1 tbsp. instant minced onion
2 tsp. flour
1/2 tsp. salt
1/2 tsp. dry mustard
1 pkg. (10 oz.) frozen chopped spinach, cooked & well drained

Mix together all ingredients except spinach. Pour into 1 1/2 quart casserole. Bake in preheated 350 degree oven until knife inserted near center comes out clean, 30-35 minutes. Garnish with parsley, if desired. Serves 4.
