LUSCIOUS LEMON BARS 
1 c. all-purpose flour
1/3 c. + 1 tbsp. conf. sugar
1/2 c. butter
4 lg. eggs
3/4 c. gran. sugar
1/2 c. frozen bottled lemon juice from concentrate, thawed

Mix flour and 1/3 cup confectioners sugar in a medium bowl. Cut in butter until mixture resembles small peas. Mixture will be dry and crumbly. Press in bottom of ungreased 9" square pan. Bake in preheated 350 degree oven for 15 minutes or until lightly golden. Meanwhile, with electric mixer at high speed, beat eggs in a medium-sized bowl about 3 minutes until pale and thickened. Gradually add granulated sugar and continue beating 1 minute longer or until mixture is thick. Stir in lemon juice. Pour into hot crust and bake 15 minutes or until golden and pick inserted in center comes out clean. Sprinkle with remaining 1 tablespoon confectioners sugar. Cool in pan on rack. Cut into 4" x 1" bars. Makes 16.
