MEXICAN MEATBALLS 
1 lb. ground beef
1 egg
1 1/4 oz. pkg. taco seasoning mix
1/2 c. quick cook rice
1/2 tsp. onion powder
16 oz. can tomato sauce

1. In medium bowl combine beef, egg, taco seasoning, rice, and 1/2 cup tomato sauce. Mix well. Shape into 20 meatballs, each about 2 tablespoons.

2. Place meatballs in a 12 x 8 inch microwave safe baking dish. Pour remaining tomato sauce over meatballs. Cook on HIGH for 10 to 12 minutes until meatballs are no longer pink inside, stirring and rearranging halfway through cooking. Let stand 3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
