SPICY APPLE CREPES | |
FOR FILLING: 3 tbsp. butter 4 cooking apples 1 tbsp. lemon juice 1/2 tsp. grated lemon rind 1/4 tsp. cinnamon Dash of nutmeg, ginger, coriander (any are opt.) 1/3 c. sugar 1. Peel and core apples. Slice into 1/2 inch slices. 2. Melt butter in small saucepan and add apples and lemon juice, lemon rind and spices. Cook over low heat for 5 minutes. 3. Add sugar and cook until apples are tender. Stir occasionally. Cool slightly. Fill crepes with filling. Can be served with syrup or whipped cream. |
