2 c. Bisquick baking mix 1/3 c. sugar 1/3 c. butter, soft 1 egg 3 oz. cream cheese, soft 1/3 c. sugar 1 tsp. vanilla 3/4 c. chilled whip cream Assorted fresh fruit 1/2 c. melted apple jelly Serves 8 to 10. Mix baking mix and 1/3 cup sugar. Cut in butter until crumbly. Mix in egg until soft dough forms. Pat dough into rectangle, 12x10 inches, on greased and floured cookie sheet. Pinch edges of rectangle, forming 1/2 inch rim. Bake at 375 degrees until edges just begin to brown, 10 to 12 minutes. Cool crust on cookie sheet on wire rack 2 minutes. Remove crust with spatula onto wire rack, cool completely. Beat cream cheese, 1/3 cup sugar and vanilla in small bowl on low speed until smooth. Beat in whipping cream on medium speed until stiff peaks form. Spread over crust within 1/4 inch of rim. Arrange fruit decoratively on top; brush with jelly. Refrigerate at least 2 hours. |
