RICE PUDDING 
1 1/2 c. rice
6 c. water
1 1/2 c. sugar
1 can evaporated milk
1 stick butter
3 c. milk
2 beaten eggs

Cook rice and water until tender, 10 to 15 minutes. Rinse and drain, then add remaining ingredients. Bring to a boil, then turn off; let cool. Then add 2 tablespoons vanilla. Sprinkle top with cinnamon if desired.
