SEAFOOD TORTILLAS | |
White sauce 1 lg. onion, chopped 3 tbsp. butter 1/3 c. chopped parsley 1/2 c. shredded Monterey Jack cheese 1 tbsp. imitation crab (chopped) 1/2 tsp. ground coriander 1/4 tsp. cayenne pepper 8 flour tortillas 1 jar salsa Prepare white sauce. Preheat oven to 375 degrees. Butter 11 3/4 x 7 1/2 x 3/4 inch dish. Saute onion in butter; stir in parsley, cheese and 1 cup of white sauce; add crab, coriander and pepper. Divide filling among tortillas. Put in dish, pour remaining sauce over; cover in foil. Bake at 375 degrees for 25 to 30 minutes. Add salsa before serving or individually. WHITE SAUCE: Melt 2 tablespoons butter, stir in 2 tablespoons flour. Cook 1 minute. Gradually stir in 2 cups milk. Cook until thick. Stir in 1/4 cup Monterey Jack cheese and dash of cayenne pepper. |
