SCHOOL DAY COOKIES 
1 c. shortening
1 c. sugar
2 eggs
1/2 c. fresh orange juice
2 tbsp. grated orange rind
1 tsp. vanilla extract
2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
2 c. quick cooking oats (not instant)
1/2 c. chopped dates
1/2 c. chopped walnuts

Preheat oven to 375°F. Grease a large baking sheet. In a large bowl cream together the shortening and sugar. Add the eggs and beat well. Add the orange juice, rind and vanilla; beat until mixed. In medium bowl, sift together the flour, salt and baking soda. Add to the creamed mixture and beat well. Stir in the oats, dates, and walnuts. Drop from a teaspoon onto cookie sheet.

Bake for 12 to 15 minutes. Remove from pan and cool on a rack.

Makes about 4 dozen.
