BLINTZES 
3 eggs
1 c. milk
1/2 tsp. salt
2 tbsp. salad oil
3/4 c. all-purpose flour
Butter or salad oil for frying

Mix all ingredients together. (I use a blender.) Let set for 2 hours in refrigerator. Use a 7 inch teflon pan for frying Blintzes. Can make ahead and freeze between wax paper.

Fill with about a tablespoon of filling and fry in butter (placing good side down first). Or bake in casserole dish for 20 minutes at 350 degrees.

APPLE FILLING:

3 tbsp. butter
2 c. finely chopped raw apple
1 tbsp. flour
1/4 to 1/2 c. sugar
1/2 tsp. cinnamon
1 tsp. lemon juice

Melt butter in pan, add chopped raw apple, cook over medium heat about 5 minutes, stirring occasionally until apples are almost tender. Add flour, sugar, cinnamon and lemon juice. Serve with sour cream and cinnamon sugar (1/2 cup sugar, 2 teaspoons cinnamon).

CHEESE FILLING:

2 c. well drained sm. curd cottage cheese
1 egg yolk
2 tbsp. sugar
1 tbsp. lemon juice

In small bowl combine all of the above until blended. Serve with sour cream and cherry or strawberry preserves. Can also use pie filling.
