REFRIGERATOR CHEESE CAKE 
2 (8 oz.) pkgs. cream cheese, room temp.
3 eggs, separated
2 pkgs. gelatin (unflavored)
3/4 c. sugar
1 c. water
1 (8 oz.) heavy cream
1 tsp. lemon juice
1 tsp. vanilla

In a small pot let gelatin set for 5 minutes in cup of cold water. After 5 minutes beat in egg yolks and sugar. After 5 minutes beat in egg yolks and sugar. Cook until thicken at least 5 minutes. In large bowl place cream cheese. Beat in gelatin mixture. Beat egg whites until stiff. Beat cream until thick. Fold cream and egg whites into mixture. Add vanilla and lemon juice. Pour mixture into crust. Refrigerate overnight.

COOKIE CRUMB CRUST:

1 1/2 c. vanilla wafer crumbs
1/2 stick melted butter
1/4 c. sugar

Mix together and press in spring form pan and bake at 450 degrees for 10 minutes. Cool.
