SWEET AND SOUR SAUSAGE | |
1 1/2 lbs. kielbasa 3/4 c. precooked rice 1 green pepper 1 onion 3 tomatoes 2 c. pineapple chunks, drained 1 tbsp. cornstarch 1/2 tsp. ginger 1 tsp. soy sauce 1/2 c. apricot preserves 1 tbsp. vinegar Parboil kielbasa for 10 minutes. Cook rice. Cut in pieces and saute 5 minutes - pepper, onion, tomatoes and kielbasa. Combine cornstarch, ginger, soy sauce, vinegar and apricot preserves. Stir into kielbasa mixture. Heat to thicken. Add drained pineapple chunks. Heat and serve over rice. |
